Community Impact: Jobs


Before Derek Culver entered New Community’s Culinary Arts program in February of 2011, he had been unemployed for three years. His last job was unloading containers at Port Newark.  “Cooking has always been my passion and is what I really wanted to do,” he said.  Since graduating from New Community’s culinary arts program last October, Culver has been employed by Gourmet Dining Services at Seton Hall University in South Orange. He has prepared everything from sauces to soups, meats like turkeys and roast beef, seafood like baked jerk tilapia, along with dishes like Mexican lasagna. Culver also makes many different kinds of pizza, ranging from egg plant to prime rib with pepper jack cheese and buffalo chicken with blue cheese.  “He’s doing a great job. He’s very professional and responsible and has a great rapport with the students,” said Nancy Oliver, who oversees the dining operations.  According to Culver, 45, the training he received at New Community has prepared him well for his current position.  “Everything brings me back to NCC. It’s the same basic structure,” he said. “Everyday it’s something different and something new. That makes it fun.” Daniel Costello, the executive chef at Seton Hall, said Costello has adapted well to the fast-paced environment, noting the area of dining known as the ‘University Club’ serves some 1,600 lunch meals a day.  “Derek is very good. He’s part of the team now,” he said.
